Homemade Baby Food

In about two 2 days my lil one will be turning 4 months old. Time really does fly. The physician has advised us to start him on solids. I have decided to home cook for him, wait let me rephrase that I am going to try to home cook for him everything that he eats. So, I wanted to start a recipe collection for my visitors and maybe they can use the recipes I use for Ryan too.

Here goes nothing for the first recipe:

Quick TIP: Buy really small containers so you can store servings separately.

Baby's First Veggies

1tsp Olive Oil ( I opted for Chicken Broth)
1 large peeled and chopped carrot
1 potato peeled and chopped
1 tbsp peas, fresh or frozen
2 tbsp corn kernels frozen or canned (UNSALTED)
4 tbsp. of baby water

(4-6 month old baby recipe)
Heat the olive oil (or chicken broth) in a small pan over medium heat. Add the carrot and fry until soft, about 5 min.

Add the potato, peas, corn, and water and stir to mix. Bring to a boil, then cover and simmer for about 15 mins, stirring occasionally to prevent sticking.

Puree by pushing through a sieve or by using a blender. Add a little more water if a thinner consistency is preferred.

This recipe makes 4 servings for a 4 month old and 1 serving for a 6 month old.
Storage: 24hrs in refrigerator and 4 weeks in freezer.

My parents and sister just left!

Ahhhh...I always cry! I just get so emotional when they leave. I miss them so much and its hard when they come to visit me and then its time for them to go home. They got to meet their grandson and fell head over heels for him. My little sister also came and fell in love with her nephew, as did Ryan with them. I am now here in my little home on the island alone once again. It's very hard to be away from my family because I am very close to them and it's hard to be on my by myself without them. Because even though I am with my hubby he is working most of the time and it is just Ryan and I. Okay I'm tearing up! I wish so much to be close to them but for now I can't so I will just make the best of it!

Okay on a happier note......I have PICTURES!!!! Little Ryan is growing up and he is a stud muffin!

MIA

Why have I been missing in action? Well, as most of you know I reside in the beautiful island of Puerto Rico but, I am not from here, my husband is. I am from the Lone Star State of TEXAS. I have lived here in Puerto Rico for a little over a year and a half. I get home sick very often and my family tries to visit me as much as they can. My sister was here about a month ago and now my parents are here. On top of all that I just had my baby boy Ryan in April and they had not met him so, we are trying to spent every moment together. They are going home very soon and I will be back to my lonesome self. It is very hard to be away from them but it is a part of life. I just have enjoy every moment I get to spend with them when the visit or when I visit them. I will be on again soon blogging away. :) Do any of you have any tips for remaining close to family even if you are far away?

Stop your baby from growing???

I was thinking today about how fast my baby boy is growing. I would like to know if you could choose to stop your baby from growing at a certain age, what age would that be???

I'm thinking I would choose 5 years old because they are already potty trained, eat the food you cook(most of the time). Plus they are cuties!

My life just got a bit better.


I am here standing in a long long line at the bank hearing people tell each other their life story as they stand in line.....amazing how much info they give out. Anyhow I logged on to blog about how my life just got a tiny bit better. Well first my hubby and I have been going through some financial hard times this past month and I was not able to get a phone I wanted (notice I said want not need)....but my hubby surprised me yesterday by making me the proud new ower of the Sprint Palm Pre. Yay! So far I love it!

One word OPRAH.....I moved to Puerto Rico in December of 2007 and I had to give up Oprah because that was the ONLY show I watched that they did not give on TV here. Yesterday I was flipping through the channels to see what was in TV and low and behold there she was OPRAH. It was like seeing an old friend.

So that is how my life got a bit better today. How has your life gotten better today or this week?
